Poppy Seeds are oilseeds rich in minerals like iron, copper, calcium, manganese, zinc and magnesium and they are a popular additive in cooking globally. They are called khus khus in Hindi and Indian cuisine relies heavily on the white version of Poppy Seeds. They are also available in black, gray and a slightly bluish shade. Many popular dishes in India use Poppy Seeds in paste form to thicken the curry.
Poppy Seeds have a deep nutty flavor with a crunchy texture that is almost fruity and floral. Slightly bitter in themselves, when combined with other ingredients, poppy seeds mix well and do not overpower the dish with its otherwise intense flavor.
Poppy Seeds are used in Curries, pastries, breads, cakes, salad dressings, vegetables, meat, etc. Also, in India, they are often added in the tempering added on to dal and other curries. Gently frying them in a pan makes it crisp and oozed out the seed's nutty flavor.
